Orange and poppy seed muffins

In honour of national farriers week I thought I would share some super simple baking recipes that make the perfect gifts! 
Are muffins more your thing? I love this recipe and you can make them as regular muffins or I like to make them as mini muffins. 🍊 (why is there no cupcake/muffin emoji?) 

You will need: 

  • Either melted butter or cooking spray to grease your muffin pan
  • 1 tablespoon of poppy seeds
  • 3/4 cup milk
  • 2 1/2 cups self-raising flour
  • 3/4 cup caster sugar
  • 125g butter, melted
  • 2 eggs, whisked lightly 
  • 2 teaspoons of orange rind
  • 1/4 cup fresh orange juice
  • Icing sugar to dust

Method: 

Preheat your oven to 190 degrees and grease your muffin pan with melted butter or cooking spray. Combine the flour and sugar in a large bowl, add the poppy seeds, milk, butter, egg, orange rind and juice and stir with a wooden spoon until just combined. (If you over mix your muffins will be tough). Spoon your batter into your muffin pan and bake for 25 minutes or until a skewer inserted comes out clean (mini muffins will cook faster than larger ones). Remove from the oven and transfer to a wire rack to cool. Once cooled dust with a little icing sugar!
