Grandma’s peanut butter cookies πŸͺ

In honour of national farriers week I thought I would share some super simple baking recipes that make the perfect gifts! 

You will need:

  • 85g butter
  • 2 Tbs peanut butter (I like using crunchy) 
  • 1 cup icing sugar
  • 1 1/2 cup plain flour
  • Dash of vanilla essence
  • 1 egg

Method: 

Cream butter, icing sugar and peanut butter with an electric whisk, beat in the egg and vanilla. Add the flour and mix well with a wooden spoon. Roll into balls and flatten with a fork (you can make them any size but they are quite sweet so I like making little ones) place them on a greased tray and bake in a 180 degree oven for 25 minutes. (Less if your oven is fan forced) 

You can add mini choc chips before the go in the oven or drizzle with melted chocolate after they’re baked or just serve them as is! 

    These are so quick and simple, I use them for thank you gifts all the time!
