Carousel Horse Cupcakes

Since the weather has been so bad this week I thought I’d get into the kitchen and make some cupcakes. I was on Pinterest the other day and I saw some super cute carousel horse cupcakes and thought that would be a fun project.

Chocolate coconut cupcakes

Ingredients

  • 125g butter, softened
  • 1 cup caster sugar
  • 1/2 teaspoon coconut essence
  • 2 eggs
  • 1 1/2 cups self-raising flour
  • 1/4 cup cocoa powder
  • 1/2 cup desiccated coconut
  • 1 cup milk

Method

Preheat the oven to 180°c or 160°c fan forced. Fill a cupcake tray with cupcake liners. Using an electric mixer, beat butter, sugar and coconut essence until fluffy. Add eggs one at a time, beating well after each one.

Sift half the flour and half the cocoa to the butter mixture. Add half the coconut  and half the milk stirring to combine. Repeat with the remaining flour, cocoa, coconut and milk. Spoon into the cupcake liners. Bake for 20-25 minutes or until a skewer comes out clean (this time may vary depending on your oven).Allow to sit in the tray for five minutes then allow to completely cool on a wire rack.

Chocolate cream cheese frosting

Ingredients

  • 250g cream cheese
  • 170g dark chocolate
  • 3 tablespoons milk
  • 1 cup icing sugar
  • 1/2 teaspoon coconut essence

Method

Melt the chocolate in a microwave in 30 second increments, stirring until it’s fully melted. Beat the cream cheese and sugar until light and fluffy. Add the chocolate, milk and coconut essence, beat until smooth. Add more milk for desired consistency.

Once the cupcakes are cooled pipe or spread the frosting on top. Add sprinkles if you desire.

  • Scrapbook paper
  • Paper straws
  • Tape
  • Ribbon

Print off the carousel horse image or print off your own. I printed mine on plain printer paper and glued it onto card stock to give it more structure. Tape the horse a little further than half way up the straw, I finished the top of the straw with a ribbon bow. Using a template trace the shape of your cupcake wrapper on to the scrapbook paper (you can find all sorts of different sized and shaped templates online, just Google cupcake wrapper template). Cut out the wrapper, I used scrapbooking scissors along the top to give it a decorative edge. Place your cupcake in the wrapper and stick the straw in the top. Enjoy! These turned out really cute, I’m super happy with the result and it wasn’t that difficult.
